After 20 years of contributing, learning and growing within the Los Cabos culinary scene,  we still had a burning desire to create a unique platform where we could constantly explore our passion for Mexican food and the culinary arts, fine wine and hospitality; a venue where we could go back to the basics of high quality locally grown, farm to table ingredients, that offered traditional Mexican Cuisine as well as modern techniques and a cutting edge vision for Baja Cuisine.

 

By creating an optimal space for fine dining in San Jose del Cabo, we hope to share our passion with travelers and locals alike. We hope you enjoy your experience as much as we enjoy creating it!

In December of 2014 we began our farm project, taking great pride in both where and how we source our ingredients. The project cam out of a basic understanding that to create the best meals you must first begin with the best ingredients. With this thought and a passion for our community, we began the transition to locally grown and locally produced ingredients, so we are better able to deliver the best San Jose del Cabo fine dining experience.

Whether we are recreating a classic Mexican dish or breaking new ground with contemporary flavors, it’s important to us that our food is created with a clean conscience. Chef Tadd Chapman has an invested dedication to the farm, frequently visiting to check in and plan the Don Sanchez Menu around seasonal ingredients.

For this we thank you for your patronage and for continuing to support local farmers in the Baja Sur. Because of you we are able to offer the freshest quality in all Tadd Chapman Restaurants.

Mixology

The majority of our high-quality produce is grown and harvested form local organic farms, much from our very own farm and mango grove; Sanchez Organico. Our seafood comes from local fisherman ensuring the best, freshest quality. Fresh oysters and clams are delivered 3 times a week and our fish daily. We do our best to assure all of our produce and seafood are environmentally sustainable and checked regularly for consistency.

We ensure that all our meats are humanly raise and only serve “grass fed, hormone free” beef from selected ranches, and then age it to perfection and season with kosher salt. Our chicken, goat and pork all come from local ranches and are ensured natural chemical free diets and free range of the ranch.
