Now we can definitely feel the heat of summer here in Los Cabos. Summer officially began on June 21, but it was until a few weeks ago that we felt really hot. In the farm at Sanchez Organic, we are already reaping the last mangos of the season. So far we harvested more than five tons of mango and yet we can possibly reap two tons more. Without doubt, a historical production for us!
Moreover, since it is our first season in which we will have a larger scale planting and much greater diversity, we decided to fertilize all our soil with sheep and goat manure as they have proven to be the best fertilizer given its characteristics. We decided to carry out this process all over the field being the first time the ground is prepared in more detail. In parallel, production of compost is continuous thanks to the volume of organic waste we produce in our three restaurants. However, it will be until early September we start to harvest the compost that will directly go in our garden beds.
It gives us pleasure also to announce that we have already received our first seeds! In the Sanchez Organic farm we are committed to organic production standards of the highest quality. That’s why we got the seeds directly from the most reputable organic property in Mexico within permaculture, I mean “Las Canadas, cloud forest” in Veracruz. Although we will also be getting import certified organic seeds, we seek at all times to support all local production as much as possible because that guarantees a greater sustainability in terms of access to our inputs. So the combination of organic compost of excellent quality seeds opens the way to what we hope will be, also a historical production of produce. We will be happy that it goes that way and even more happy to share our experience with other organic producers as well as with our customers.
Later this month will also begin to prepare all the trays where our first seeds of the season (starting with tomato seeds ) will germinate. I promise to share with you this process with photographic material as well as some interviews with our team at Organic Sanchez led by myself, our dear friend, Cristo Rey and his wife Zulema.
So while some enjoy the summer and others hide from the heat, at the Sanchez Organico farm we keep preparing in order to satisfy the need of fruits and vegetables of our restaurants. Our vision is to eventually produce 100% of our vegetables and even generate surplus that allows us to share even more with the community. So see you soon in the garden to start planting.
